How can I change the IPS TAG of my .UK domain?

If your .UK domain is registerred or transferred to SiteGround you can change it ISP TAG from the:

Customer Area -> My Account -> Domain Names -> Manage button -> Domain Name Tag

If your .UK domain is not registerred by SiteGround but you need to change its TAG in order to initiate a domain name transfer, you hould contact your current registrar and ask them to make the change.
